It sounds to me that your still using v8.1
V8.1 is not supported by W7 and might explain why the backup snapshot section doesnt work. You said that it works in W7 x32 but not the W7 x64. I think consider yourself lucky it works at all with either of them.
I would recommend upgrading to v9.1 as its fully compatible with W7 x32 and x64. However the backup snapshot portion of the program is gone.
You can still get the backup portion as a separate program called Drive Cloner RX and i think they offer it at a discounted price when you upgrade (please check the site to verify this or contact Support).
