Encrypting everything prevents your system files from being altered while powered down. It also prevents the recovery of sensitive information like the decryption keys of your other means of encryption from the pagefile/hibernation file or other information from temp files etc etc.

It would also prevent someone from recovering the files you encrypted from a previous snapshot where the files were not encrypted.

Since Rollback Rx prevents whole disk encryption it would be nice if it actually provided what it says it does which would be a good enough equivalent.
