Have you tried mounting the more recent snapshot in RBRx's snapshot explorer to see if you have your stuff there? If you rolled back to eliminate some kind of problem, and chose a snapshot that was before your downloads etc, that's exactly what you would expect to happen. If you chose the option not to make a snapshot of the state you were rolling back from, then you've lost it, but by default it would have captured the state before you rolled back and you can roll forward again.

My advice to anyone is to keep the operating system and application files away from user data (including downloads), and not to protect the user data partition. That way, if you have to roll back to overcome an installation problem your data remains intact and you don't have to go fishing for it.
